Abstract:1-Methylcyclopropene(1-MCP) is a new inhibitor of ethylene perception. Effect of 1-MCP (0 - 1 000 nmol. L-1) on pepper fruits stored at 20C was initially studied. The results showed that commodity rate of pepper fruits treated with 1-MCP (250 nmol.L-1) was higher than those of the control, the degradation of chlorophyll, softening and degreening in treated fruits were significantly retarded,and that ethylene production was also obviously reduced by 1-MCP treatment.
