Abstract:The types and content of carotenoids in matured pepper(Capsicum annuum L.)fruit can determine its fruit color.This paper reviewed the recent research progress on studying carotenoid in pepper fruit by scientists both at home and abroad,expound the biosynthesis pathway of carotenoid in pepper fruit,genetic rule for fruit color change and the research progress made in studying the major enzymes involved in biosynthesis track.
