Abstract:Lettuce(Lactuca sativa L.)is rich in antioxidant compounds such as polyphenols,ascorbic acid,carotenoid and Vitamin E.The paper summarized the recent studies on lettuce antioxidant and mainly focused on three perspectives including the constitution and content of antioxidant,the assessment and mechanism of oxidation resistance,and the influence of environmental,and other factors on antioxidant.Furthermore,the prospect in the field of lettuce antioxidant is discussed in detail.
