Abstract:In this study,tomato fruit color of the materials‘TA517’,‘TA1527’and‘E6203’were estimated by Chroma meter,and lycopene content were measured by HPLC.Regressive equations were developed and used to predict the lycopene content of 28 tomato materials.The lycopene content,measured by HPLC,was correlated with the color estimation,and the Ya*/b*,Y(a*/b*)2,and YHue color factors produced the best regressions.An estimation of the lycopene content in tomatoes can be achieved by using a portable Chroma meter.
