Effect of Experimental Conditions in TPA Test on Melon Textural Property

Abstract:Taking oriental and mask melons as material, this experiment studied the effect of experimental
conditions in texture profile analysis(TPA) on melon textural properties. The result showed that textural properties
of different melons were significantly affected by deformation degree. Crosshead speed had not much influence on
textural properties. The histological structure of melon flesh appeared little destruction, when deformation degree
were 30%-40%. The textural properties had significant correlation with sensory evaluation under 30% deformation
degree and 1 mm·s-1 crosshead speed. In conclusion, 30% deformation degree and 1 mm·s-1 crosshead speed
were chosen as experimental conditions for TPA test, it could objectively reflect the textural characters of melon
flesh structure.
