The effect of different storage age on quality variety of tumorous stem mustard

Abstract:By sealed storage tumorous stem of tumorous stem mustard at normal temperature,we mensurate the content of VC、soluble sugar、free amino acids、nitrate、nitrite.The results show,the content of VC、soluble sugar、free Amino Acids、nitrate descend gradually with prolong of storage period,but the content of nitrite ascend gradually.Take main basis of security quality,we suggest tumorous stem mustard should be edible in 6-12 days after harvest store.In fresh-keeping storage,it should take sealed measure at low temperature to decrease respiration,prolong fresh-keeping age and increase nutritional quality.
