Abstract:Anthocyanin is the main color generation substance of potato,presenting special nutritional value.This paper summarized the advance achieved recently in potato anthocyanin research,focusing on studing anthocyanin type,biosynthesis pathway and its molecular regulation mechanisms,expecting to provide references for studying the mechanism of potato anthocyanin biosynthesis and quality improvement of anthocyanin enrichment in color potato.
