Abstract:Spinach is rich in nutrients,cultivated and consumed worldwide.This article described the quality breeding of spinach from three aspects:appearance quality,nutritional quality and processing quality.The appearance quality of spinach was mainly aff ected by genetics,temperature,light quality,water quality,fertilizer and hormones.The nutritional quality was mainly aff ected by genetics,variety,cultiv ation pattern and sowing period,fertilizers,and other factors.The processing quality was mainly affected by processing mode.Lastly,countermeasures and suggestions for breeding spinach with high nutritional quality are proposed.This article provides reference for the screening and creation of germplasm resources in the process of spinach quality breeding in China.
