Abstract:28 cultivars or crossing combinations of tomato were used for conducting the correlation and path analysis of ten main characters which form the viscoelasticity of processing tomato.The results showed that the viscoelasticity had very significant positive relationship with pectin and dry matter content,At the same time,pectin and dry matter content had the greatest influence than others on the viscoelasticity of processing tomato.Pectin and dry matter content were main factors which directly influenced the ...
