Abstract The effects of different concentrations MeJA treatments on endogenous hormone level and lignin metabolism related enzyme activity in cold-stored bamboo shoots(Phyllostachys praecox)were investigated in this study to highlight the mechanisms for alleviating flesh leatheriness.The results exhibited that the 10 μmol?L-1 MeJA treatment could effectively regulate the endogenous hormone GA3,ABA and ethylene contents,maintain the balance between the changing GA3 and ABA contents,and at the same time inhibit the activity increase in PAL,CAD,4-CL,POD and PPO.Finally the lignin biosynthesis was remarkably inhibited,the higher extractable juice rate was maintained and the firmness increase in cold-stored bamboo shoots was delayed.
