Abstract The changes of acetaldehyde and propionaldehyde in cucumber fruits were analysised by solid-phase mircroextraction (SPME)gas choromatography during fruit development and storage at 20 ℃ . The results showed that trans-caryophyllene disappeared after fresh cucumber were stored 3 days, the contents of trans-caryophyllene had no regular changes during fruit development, the content of acetaldehyde and propionaldehyde decreased gradually with fruit development and storage at 20℃ ,the content changes of propiona...
