Abstract Nutrition and edibleness of leaf and shoot of new yam variety Guihuai No.2 were studied. Results showed that the protein content of leaf and shoot was 2.82 %, lower than pea shoot and higher than other vegetable seedlings; meal fibre was 4.46 %,which was the highest among the same type vegetable seedlings; the contents of heavy metal and organophosphorus pesticide were far lower than the standard;the MTD toxicity test with the mouse showed to be at the nontoxic level.
