Abstract Effects of different N, P and K fertilizer levels on pectin, chromium and pentose contents in winter squash(Cucurbita maxima Duch. ex Lam.)fruits were studied in the experiment using cultivar‘Longyuanlixiang’. The results showed that the contents of pectin, pentaose and Cr3+ in winter squash fruits decreased significantly under every treatments of high N fertilizer level(carbamide 450 kg·hm-2). Compared to CK(N1P1K1),the contents of 3 kinds decreased-sugar substance significantly increased under the treatment of only increasing K fertilizer level(N1P1K2), the contents of Cr3+ and pentaose significantly increased under the treatment of only increasing P fertilizer level(N1P2K1), the contents of Cr3+ increased under the treatment of increasing P and K fertilizer level(N1P2K2). In order to increase pectin, pentaose and Cr3+ contents in winter squash fruits, as super-addition fertilizer, the treatment of N1P1K2 could be used in winter squash production.
